Pork Cube Steak is similar to beef cube steak.  It is made from lean cuts (like sirloin or ham) that are run through a mechanical tenderizer. The machine pierces the meat with tiny blades, leaving cube-shaped indentations.  It is very tender because the tough fibers are mechanically broken down.  It's ideal for "chicken-frying" (dredging in flour and pan-frying) or serving smothered in mushroom gravy and mashed potatoes.  It is also a popular base for quick-cooking recipes like Pork Cube Steak Parmesan or Pork Schnitzel. It is packed in 1lb packs.
